These easy Banana Spice Muffins are light, tender and stay moist from the banana. They are so simple to make with just a few kitchen ingredients.

- Muffin Baking Mix, Spices
- Oil, Butter, Eggs, Buttermilk, Vanilla
How to make Banana Spice Muffins
Step 1: Make muffin batter
Pour muffin mix into bowl or mixer. Add dry ingredients. Add wet ingredients and mix together until just combined.
Step 2: Chill cookie dough
Scoop batter into muffin liners and fill 3/4 full. Sprinkle tops with course sanding sugar.
Step 3: Bake
Pre-heat oven to 350° and bake for 13 – 15 minutes.
Step 4: Storage
Store on counter 3-4 days or freeze up to 6 months.

Banana Spice Muffins (Baking Mix)
Ingredients
DRY INGREDIENTS
- Muffin Baking Mix
- 2 Tbsp. brown sugar
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- ¼ tsp. clove
WET INGREDIENTS
- 1 c. mashed banana
- ⅓ c. oil
- 1 egg
- ¼ c. buttermilk or milk
- 1 ½ tsp. vanilla
MIX-INS
- ½ c. nuts optional
Instructions
PREP
- Line muffin pan with muffin liners, or spray with non-stick spray.
MAKE BATTER
- Pour Muffin Baking Mix and dry ingredients into bowl or mixer.
- Add wet ingredients and mix until combined.
- Scoop batter into muffin liners ¾ full. Sprinkle with course sanding sugar.
BAKE
- Bake at 350° for 20-25 minutes. (oven time may vary). Let cool and store in air-tight container.
