Are you looking to add some vintage muffin recipes to your Thanksgiving buffet? Here are some recipe for pumpkin muffins from “The Perfect Pumpkin” (1997).
Pumpkin Muffins

Ingredients
- 1/2 cup butter
- 3/4 cup brown sugar
- 1/4 cup honey
- 1 egg
- 1 cup pumpkin puree
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped nuts
Instructions
- Preheat oven to 400°F (205°C).
- Cream the butter. Gradually beat in the sugar.
- Add the honey, egg, and pumpkin, mixing well.
- Combine the dry ingredients and add to the pumpkin mixture. Stir in the nuts.
- Fill greased muffin tins three-quarters full. Bake for 18 minutes.
Notes
For a stronger “harvest” flavor substitute molasses for honey
For a traditional spicy flavor add 1 teaspoon cinnamon or pumpkin pie spice
For earthiness use pumpkin seeds instead of nuts
For elegance add the grated rind of 1 orange
For fruitiness stir in 1/2 cup raisins, chopped prunes, or chopped dried apricots
For political correctness add both fruit and 1/2 cup oat or wheat bran
