<p class="wp-block-paragraph">This <strong>Peanut Butter Granola</strong> recipe is has homemade crunchy peanut butter, peanuts, and other wholesome ingredients like raisins, flax, unsweetened coconut, and honey. It&#8217;s super easy to make and packs a boost of protein. Perfect to top your breakfast yogurt parfait or as a healthy on-the-go snack.</p>



<p class="wp-block-paragraph">This was one of my first products sold in my specialty bakery over 12 years ago. It is similar to my<strong> <a href="https://vintagebakedmodern.com/cranberry-almond-granola/">cranberry almond granola</a> </strong>or <strong><a href="https://vintagebakedmodern.com/classic-granola/">classic granola</a></strong> and super easy to swap out ingredients to make it your own. </p>



<h2 class="wp-block-heading" id="h-ingredients-to-make-peanut-butter-granola">Ingredients to make Peanut Butter Granola</h2>



<h3 class="wp-block-heading" id="h-wet-ingredients">Wet Ingredients</h3>



<ul class="wp-block-list">
<li><strong>Honey</strong> is produced by honeybees from the nectar of flowers that is considered an unrefined natural sugar.</li>



<li><strong>Canola oil</strong> is perfect for baking as it has a neutral and light flavor.</li>



<li><strong>Peanut butte</strong>r is made from peanuts, oil, sugar and salt turned into a creamy or chunky texture. Look for one that has &#8220;fully hydrogenated oil&#8221;, minimal trans fats, and no high fructose corn syrup. Some varieties labeled &#8220;natural&#8221;, may be &#8220;Peanut Butter Spread&#8221; containing palm oil. Authentic &#8220;all-natural&#8221; peanut butter is made from ground peanuts and salt.</li>



<li><strong>Vanilla</strong> provides hints of caramel and spice, enhancing the depth of flavor to baked goods. The best quality is an all-natural and made from real vanilla beans containing at least 35% alcohol.</li>
</ul>



<h3 class="wp-block-heading" id="h-dry-ingredients">Dry Ingredients</h3>



<ul class="wp-block-list">
<li><strong>Oats</strong> are a whole grain that are high in fiber and available in their natural whole form, or as quick oats, which are finely cut and pre-cooked.</li>



<li><strong>Brown sugar</strong> is granulated sugar combined with molasses, sold as either light brown sugar (with 3.5% molasses) or dark brown sugar (with 6.5% molasses) for a more robust flavor.</li>



<li><strong>Cinnamon</strong> comes from dried bark from the tropical Asian cinnamon tree and is available as whole cinnamon sticks or ground. There are two types: Cassia which has a warm, sweet flavor, and Ceylon known as &#8220;true cinnamon&#8221;, which has an intense spicy bite.</li>



<li><strong>Pink salt</strong> is a type of rock salt found near the Himalayas, that is minimally processsed and contains trace minerals.</li>
</ul>



<h3 class="wp-block-heading" id="h-wholesome-mix-ins">Wholesome Mix-Ins</h3>



<ul class="wp-block-list">
<li><strong>Coconut</strong> is the fruit of palm trees found in tropical regions, that comes either unsweetened or sweetened and in various forms, such as coconut flakes, shredded or finely shredded.</li>



<li><strong>Flax seeds</strong> are the unprocessed seeds of the flax plant that come in brown or golden varieties, and are available whole or ground into a fine flaxseed meal.</li>



<li><strong>Peanuts</strong> are legumes that grow underground and are rich in protein, healthy fats and fiber. Look for &#8220;dry roasted&#8221; with either &#8220;no-salt&#8221; or &#8220;lightly-salted&#8221; on the label, because most brands labeled &#8220;dry roasted, salted&#8221; often contain added ingredients like spices, msg, or sugar.</li>



<li><strong>Raisins</strong> are sun-ripened dried grapes, made from either green or purple grapes. They are naturally sweet and add chewy texture to baked goods.</li>
</ul>



<h2 class="wp-block-heading" id="h-homemade-ingredients-to-use">Homemade Ingredients to Use</h2>



<p class="wp-block-paragraph"><strong>Homemade peanut butter</strong> is so easy to make from fresh roasted, salted peanuts in which you just place in food processor and blend to desired consistency. Use roasted peanuts without salt or lightly-salted, and grind in a food processor for 2-3 minutes.</p>



<p class="wp-block-paragraph"><strong>Vanilla:</strong> Purchase <a href="https://amzn.to/42R1MdL">Grade B vanilla beans</a> (also called extract-grade), which have less moisture and a more concentrated flavor. Place 8 oz. of bourbon (or vodka) in glass bottle or jar. Split 5-7 vanilla beans down the middle and add to bottle. Let it sit for 3-6 months in a cool, dark place. As you use it, continue to replace the bourbon and add more beans as it keeps for many years.</p>

<h2 class="wp-block-heading" id="h-dietary-substitutions">Dietary Substitutions</h2>



<p class="wp-block-paragraph">Making granola can be very versatile and you can basically swap out the ingredients to fit your dietary needs. </p>



<p class="wp-block-paragraph">For the oil, substitute a neutral tasting coconut oil or extra light olive oil.</p>



<p class="wp-block-paragraph">If you need to avoid certain types of nuts like tree nuts, swap out the coconut with peanuts or seeds like sunflower seeds or hemp seeds.</p>



<p class="wp-block-paragraph">If you have a tree nut allergy avoid these: almonds, walnuts, pecans, cashews, hazelnuts, brazil nuts, pistachios, macadamia nuts, chestnuts and coconut.</p>

<p class="wp-block-paragraph">This <strong>Cherry Almond Granola</strong> has nutty almond clusters, tart dried cherries and naturally sweetened with honey. It&#8217;s packed with wholesome superfoods like pepitas, flax seeds, and coconut. Superfoods make a great addition as they are nutrient dense, high in antioxidants, low in sugar, and packed with protein.</p>



<p class="wp-block-paragraph">This recipe was one of my first products sold in my specialty bakery over 12 years ago. It is similar to my<strong> <a href="https://vintagebakedmodern.com/cranberry-almond-granola/">cranberry almond granola</a> </strong>and super easy to swap out ingredients to make it your own. Bake up this easy granola recipe for a wholesome breakfast on yogurt or as a on-the-go snack.</p>



<h2 class="wp-block-heading" id="h-ingredients">Ingredients</h2>



<h3 class="wp-block-heading" id="h-wet-ingredients">Wet Ingredients</h3>



<ul class="wp-block-list">
<li><strong>Honey</strong> is produced by honeybees from the nectar of flowers that is considered an unrefined natural sugar.</li>



<li><strong>Canola oil</strong> is perfect for baking as it has a neutral and light flavor.</li>



<li><strong>Cherry juice</strong> is made when fresh cherries are pressed to extract their natural juice.</li>



<li><strong>Vanilla</strong> provides hints of caramel and spice, enhancing the depth of flavor to baked goods. The best quality is an all-natural and made from real vanilla beans containing at least 35% alcohol.</li>
</ul>



<h3 class="wp-block-heading" id="h-superfood-mix-ins">Superfood Mix-Ins</h3>



<ul class="wp-block-list">
<li><strong>Pepitas</strong>, otherwise known as pumpkin seeds, have a mild, nutty flavor eaten either raw or toasted.</li>



<li>Coconut is the fruit of palm trees found in tropical regions, that comes either unsweetened or sweetened and in various forms, such as coconut flakes, shredded or finely shredded.</li>



<li><strong>Cranberry seeds</strong> are small, hard seeds found in cranberries. While typically not eaten on their own, they add a tart punch of nutritional value to snacks or smoothies.</li>



<li><strong>Flax seeds</strong> are the unprocessed seeds of the flax plant that come in brown or golden varieties, and are available whole or ground into a fine flaxseed meal.</li>



<li><strong>Dried cherries</strong> are made from ripe cherries harvested in mid-summer and then dehydrated to concentrate their flavor and natural sweetness.</li>
</ul>



<h3 class="wp-block-heading" id="h-dry-ingredients">Dry Ingredients</h3>



<ul class="wp-block-list">
<li><strong>Almonds</strong> are seeds from the almond tree, native to the Middle East that have a mild, nutty flavor and crunchy texture and considered a tree nut.</li>



<li><strong>Oats</strong> are a whole grain that are high in fiber and available in their natural whole form, or as quick oats, which are finely cut and pre-cooked.</li>



<li><strong>Brown sugar</strong> is granulated sugar combined with molasses, sold as either light brown sugar (with 3.5% molasses) or dark brown sugar (with 6.5% molasses) for a more robust flavor.</li>



<li><strong>Cinnamon</strong> comes from dried bark from the tropical Asian cinnamon tree and is available as whole cinnamon sticks or ground. There are two types: Cassia which has a warm, sweet flavor, and Ceylon known as &#8220;true cinnamon&#8221;, which has an intense spicy bite.</li>



<li><strong>Pink salt </strong>is a type of rock salt found near the Himalayas, that contains trace minerals and is less processed than table salt.</li>
</ul>

<li class="has-medium-font-size">Use light-colored, aluminum cookie sheets to reflect even heat during the baking process. Dark cookie sheets conduct more heat off the surface, which may burn or darken on the edges before they are fully cooked through.</li>

<p class="wp-block-paragraph">Making granola can be very versatile and you can basically swap out the ingredients to fit your dietary needs. </p>



<p class="wp-block-paragraph">For the oil, substitute a neutral tasting coconut oil or extra light olive oil.</p>



<p class="wp-block-paragraph">If you need to avoid certain types of nuts like tree nuts, swap out the almonds and coconut with peanuts or seeds like sunflower seeds or hemp seeds.</p>



<p class="wp-block-paragraph">If you have a tree nut allergy avoid these: almonds, walnuts, pecans, cashews, hazelnuts, brazil nuts, pistachios, macadamia nuts, chestnuts and coconut.</p>

It is made using the base from my<strong> <a href="https://vintagebakedmodern.com/classic-granola/">classic granola</a> </strong>and super easy to swap out ingredients to make it your own. Bake up a batch of this easy granola recipe for a wholesome treat for breakfast on top of a bowl of yogurt or grab a handful for an afternoon snack. <p class="wp-block-paragraph">Granola was – and still is – believed to be a “healthy” snack made popular in the late 1960’s-1970’s during the hippie movement. There are so many brands of granola on store shelves. From healthy to those filled with sugar, you can surely find one that satisfies your flavor palette.&nbsp;</p>



<h2 class="wp-block-heading" id="h-ingredients-to-make-cranberry-almond-granola">Ingredients to make Cranberry Almond Granola</h2>



<h3 class="wp-block-heading" id="h-wet-ingredients">Wet Ingredients</h3>



<ul class="wp-block-list">
<li><strong>honey:</strong> Honey is a liquid sweetener produced by honeybees from the nectar of flowers. It is considered an unrefined natural sugar used as an alternative to refined sugar.</li>



<li><strong>canola oil:</strong> Canola oil is perfect for baking as it has a neutral and light flavor.</li>



<li><strong>cranberry juice:</strong> Cranberry juice is made by pressing fresh cranberries to extract their natural juice. Pure 100% juice is very tart, so it is sometimes blended with other fruit juices to balance the flavor.</li>



<li><strong>brown sugar:</strong> Brown sugar is granulated sugar with molasses added, providing deep flavor and moisture to baked goods. Light brown sugar contains 3.5% molasses, while dark brown sugar has 6.5% giving a more robust flavor profile.</li>



<li><strong>vanilla extract:</strong> Vanilla provides hints of caramel and spice, enhancing the depth of flavor to baked goods. Always use a high-quality, all-natural brand that is made from real vanilla beans containing at least 35% alcohol. <strong>MAKE YOUR OWN!</strong> Purchase <a href="https://amzn.to/42R1MdL">Grade B vanilla beans</a> (also called extract-grade), which have less moisture and a more concentrated flavor. Place 8 oz. of bourbon (or vodka) in glass bottle or jar. Split 5-7 vanilla beans down the middle and add to bottle. Let it sit for 3-6 months in a cool, dark place. As you use it, continue to replace the bourbon and add more beans as it keeps for many years.</li>
</ul>



<h3 class="wp-block-heading" id="h-dry-ingredients">Dry Ingredients</h3>



<ul class="wp-block-list">
<li><strong>oats:</strong> Oats are a whole grain that is high in fiber and commonly used for cereal or baked goods. Quick oats are pre-cooked and come in smaller pieces, while whole oats remain in their natural form and take longer to cook.</li>



<li><strong>almonds:</strong> Almonds are seeds from the almond tree, native to the Middle East and grown in California. They have a mild, nutty flavor and crunchy texture and considered a tree nut.</li>



<li><strong>pepitas (pumpkin seeds):</strong> Pepitas are nutritious edible seeds inside a pumpkin. They have a mild, nutty flavor and are either eaten raw or toasted.</li>



<li><strong>coconut:</strong><a href="coconut: Coconut is the fruit of palm trees, found in tropical regions. Shredded coconut comes in various forms, like flakes, shredded and finely shredded, and can either sweetened or unsweetened."> </a>Coconut is the fruit of palm trees, found in tropical regions. <li><strong>cranberry seeds:</strong> Cranberry seeds are small, hard seeds found in cranberries. While typically not eaten on their own, they add a tart punch of nutritional value to snacks or smoothies.</li>



<li><strong>cinnamon:</strong> Cinnamon comes from dried bark from the tropical Asian cinnamon tree and is available as whole cinnamon sticks or ground. There are two types: Cassia which has a warm, sweet flavor, and Ceylon known as &#8220;true cinnamon&#8221;, which has an intense spicy bite.</li>



<li><strong>nutmeg:</strong> Nutmeg is a warm spice that comes from the nutmeg tree in the Spice Islands. It is available as whole nutmeg, grated or pre-ground.</li>



<li><strong>salt</strong>: Use a fine-ground pink salt which adds essential minerals and nutrients to baked goods.</li>

<li class="has-small-font-size">For chunky clusters, only stir granola once at the end when adding the dried fruit.</li>



<li class="has-small-font-size">Use light-colored, aluminum cookie sheets to reflect even heat during the baking process. Dark cookie sheets conduct more heat off the surface, which may burn or darken on the edges before they are fully cooked through.</li>



<li class="has-small-font-size">For even browning, place only 2 baking sheets in the oven at the same time. Place the baking sheet horizontally and rotate them halfway through the baking process. To rotate, spin the baking sheets around 180° and swap them from top to bottom and vice versa.</li>

<h2 class="wp-block-heading" id="h-dietary-substitutions">Dietary Substitutions</h2>



<p class="wp-block-paragraph">Making granola can be very versatile and you can basically swap out the ingredients to fit your dietary needs. </p>



<p class="wp-block-paragraph">For the oil, you can substitute out really any oil that works for your dietary needs. Coconut oil or butter also work great in this recipe. </p>



<p class="wp-block-paragraph">If you need to avoid certain types of nuts like tree nuts, swap out the almonds and coconut with peanuts or seeds like sunflower seeds or hemp seeds.</p>



<p class="wp-block-paragraph"> If you have a tree nut allergy,<em> this is a list of them to avoid:</em> almonds, walnuts, pecans, cashews, hazelnuts, brazil nuts, pistachios, macadamia nuts, chestnuts and coconut. </p>

<p class="wp-block-paragraph">To make granola bars: In a saucepan combine 1/2 c. peanut butter, 1/4 c. honey, 2 T. butter, and 2 T. brown sugar and heat until it boils. Then add 2 1/2 c. prepared granola into the hot mixture and pour into greased 8×8 pan. Add 1/2 c. semisweet chocolate chips on the top. Chill for 1 hour and cut into bars.</p>

<h2 class="wp-block-heading" id="h-ingredients-for-pumpkin-spice-granola">Ingredients for Pumpkin Spice Granola</h2>



<h3 class="wp-block-heading" id="h-dry-ingredients">Dry Ingredients</h3>



<ul class="wp-block-list">
<li><strong>Oats</strong> are a whole grain that are high in fiber and available in their natural whole form, or as quick oats, which are finely cut and pre-cooked.</li>



<li><strong>Coconut</strong> is the fruit of palm trees found in tropical regions, that comes either unsweetened or sweetened and in various forms, such as coconut flakes, shredded or finely shredded.</li>



<li><strong>Pepita Seeds</strong>, are pumpkin seeds with shells removed that have a mild, nutty flavor and can be eaten raw.</li>



<li><strong>Flax seeds</strong> are the unprocessed seeds of the flax plant that come in brown or golden varieties, and are available whole or ground into a fine flaxseed meal.</li>



<li><strong>Brown sugar</strong> is granulated sugar combined with molasses, sold as either light brown sugar (with 3.5% molasses) or dark brown sugar (with 6.5% molasses) for a more robust flavor.</li>



<li><strong>Pink salt </strong>is a type of rock salt found near the Himalayas, that contains trace minerals and is less processed than table salt.</li>



<li><strong>Pumpkin Pie Spice</strong> is a blend of warm spices like cinnamon, ginger, nutmeg, cloves, and allspice.</li>
</ul>



<h3 class="wp-block-heading" id="h-wet-ingredients">Wet Ingredients</h3>



<ul class="wp-block-list">
<li><strong>Honey</strong> is produced by honeybees from the nectar of flowers that is considered an unrefined natural sugar.</li>



<li><strong>Canola oil</strong> is perfect for baking as it has a neutral and light flavor.</li>



<li><strong>Vanilla</strong> provides hints of caramel and spice, enhancing the depth of flavor to baked goods. The best quality is an all-natural and made from real vanilla beans containing at least 35% alcohol.</li>



<li><strong>Pumpkin purée</strong> is made from the inside of pumpkins that has been cooked and mashed. It’s different from canned pumpkin pie filling, which is sweetened and contains warm spices like cinnamon and nutmeg.</li>
</ul>



<h3 class="wp-block-heading" id="h-mix-ins">Mix-Ins</h3>



<ul class="wp-block-list">
<li><strong>Dried cranberries</strong> are tart dehydrated berries that lend natural sweetness and vibrant color to baked goods.</li>



<li><strong>Pecans</strong> are a tree nut that grown on pecan trees in the United States and Mexico. They add texture and sweet nuttiness flavor to baked goods.</li>
</ul>



<h3 class="wp-block-heading" id="h-make-your-own-ingredients">Make your own ingredients</h3>



<p class="wp-block-paragraph"><strong>Vanilla:</strong> Purchase <a href="https://amzn.to/42R1MdL">Grade B vanilla beans</a> (also called extract-grade), which have less moisture and a more concentrated flavor. Place 8 oz. of bourbon (or vodka) in glass bottle or jar. Split 5 &#8211; 7 vanilla beans down the middle and add to bottle. Store in a cool, dark place for 3 &#8211; 6 months before using. It will keep for many years, so as you use it, just top off with more bourbon and more beans.</p>

<p class="wp-block-paragraph">Making granola can be very versatile and you can basically swap out the ingredients to fit your dietary needs. </p>



<p class="wp-block-paragraph">For the oil, you can substitute out really any oil that works for your dietary needs. Coconut oil or butter also work great in this recipe. </p>



<p class="wp-block-paragraph">If you need to avoid certain types of nuts like tree nuts, swap out the almonds and coconut with peanuts or seeds like sunflower seeds or hemp seeds.</p>



<p class="wp-block-paragraph">If you have a tree nut allergy,<em> this is a list of them to avoid:</em> almonds, walnuts, pecans, cashews, hazelnuts, brazil nuts, pistachios, macadamia nuts, chestnuts and coconut.</p>

<p class="wp-block-paragraph">This <strong>Classic Granola</strong> &#8220;build your own&#8221; is simple to put together using pantry staples like oats, nuts and seeds, along with dried fruit and warm spices. It&#8217;s perfect to top of a bowl of yogurt for a quick breakfast or grab a handful for an afternoon snack. When making granola you&nbsp;always want to use all-natural ingredients that start in their whole form to maximize their health benefits. From healthy to sweet, soft or crunchy, putting together a classic granola depends on what ingredients you have on hand and the flavors you like.</p>



<p class="wp-block-paragraph">Granola is still believed to be a wholesome snack made popular in the late 1960’s-1970’s during the hippie movement. My vintage inspiration for this recipe is&nbsp;from a vintage 1980’s La Leche League cookbook. &nbsp;</p>



<p class="wp-block-paragraph"><strong>Whole Foods for the Whole Family (1981)</strong>, by the La Leche League International, is filled with vintage wholesome recipes for breakfast, lunches, and desserts. Here is an original recipe for <a href="https://vintagebakedmodern.com/classic-granola/"><strong>one pan granola</strong></a> inspired from this cookbook.</p>

If you don&#8217;t have quick oats, using all whole grain is is just fine.</p> </li><li class="schema-how-to-step" id="how-to-step-1729807294592"><strong class="schema-how-to-step-name">Add in a some whole <strong>GRAINS</strong> or SEEDS<br/></strong> <p class="schema-how-to-step-text">Choose a whole grain such as wheat germ, oat bran or seeds like flax seeds, pepita seeds or chia seeds.</p> </li><li class="schema-how-to-step" id="how-to-step-1729807307311"><strong class="schema-how-to-step-name">Add in some <strong>NUTS</strong><br/></strong> <p class="schema-how-to-step-text">You can use a variety of nuts like almonds, cashews, walnuts, or pecans. It&#8217;s good to mix up both whole and course chopped nuts to add texture.<br/></p> </li><li class="schema-how-to-step" id="how-to-step-1729807324594"><strong class="schema-how-to-step-name">Add a <strong>SWEETENER</strong> </strong> <p class="schema-how-to-step-text">You can use either one or a combination of sweeteners such as honey, brown sugar, maple syrup, molasses or sorghum.<br/></p> </li><li class="schema-how-to-step" id="how-to-step-1729807336744"><strong class="schema-how-to-step-name">Add SPICE</strong> <p class="schema-how-to-step-text">Add up to 1 Tablespoon of warm dried spices, such as 2 tsp. of cinnamon + 1 tsp. nutmeg.<br/></p> </li><li class="schema-how-to-step" id="how-to-step-1729807357509"><strong class="schema-how-to-step-name">Add FLAVOR</strong> <p class="schema-how-to-step-text">Add up to 1 Tablespoon of flavoring like vanilla plus up to 2 Tablespoons of fruit juice or fruit puree.<br/></p> </li><li class="schema-how-to-step" id="how-to-step-1746552636361"><strong class="schema-how-to-step-name">Add <strong>DRIED FRUIT</strong> <br/></strong> <p class="schema-how-to-step-text">After the granola is done baking, add in the dried fruit. Some of the best to add are dried cherries, cranberries or raisins. You can even dice up some larger dried fruits like dried apricots or dates.</p> </li></ol></div>

<h2 class="wp-block-heading" id="h-dietary-substitutions">Dietary Substitutions</h2>



<p class="wp-block-paragraph">Making granola can be very versatile and you can basically swap out the ingredients to fit your dietary needs. </p>



<p class="wp-block-paragraph">For the oil, you can substitute out really any oil that works for your dietary needs. Coconut oil or butter also work great in this recipe. </p>



<p class="wp-block-paragraph">If you need to avoid certain types of nuts like tree nuts, swap out the almonds and coconut with peanuts or seeds like sunflower seeds or hemp seeds.</p>



<p class="wp-block-paragraph">If you have a tree nut allergy,<em> this is a list of them to avoid:</em> almonds, walnuts, pecans, cashews, hazelnuts, brazil nuts, pistachios, macadamia nuts, chestnuts and coconut.</p>

<h3 class="wp-block-heading" id="h-how-to-make-granola-bars-from-granola">How to make granola bars from granola</h3>



<p class="wp-block-paragraph"><em><strong>To make granola bars:</strong></em> In a saucepan combine 1/2 c. peanut butter, 1/4 c. honey, 2 T. butter, and 2 T. brown sugar and heat until it boils. Then add 2 1/2 c. prepared granola into the hot mixture and pour into greased 8×8 pan. Add 1/2 c. semisweet chocolate chips on the top. Chill for 1 hour and cut into bars.</p>
