This Pumpkin Spice Granola is made pumpkin puree, pumpkin pie spice and is full of crunch with pecans, dried cranberries, and pepita seeds.
INGREDIENTS
Pepita Seeds:
Pepita Seeds are pumpkin seeds that have had their shells removed. They are considered a nutrient-dense snack as they contain protein, fiber, and nutrients like magnesium.
pumpkin:
Libby’s is the best brand of pumpkin puree as it has more concentrated flavor. You can always roast your own pumpkin though to give more natural pumpkin flavor. To roast a pumpkin: simply half the pie pumpkin (2-3 lbs.), scoop out the seeds, brush with oil, place flesh down on baking sheet and bake at 450 degrees for 45 minutes. Puree in a Vitamix or high-speed blender.

Many recipes call for Pumpkin Pie Spice which you can purchase, however, I make my own Pumpkin Spice Blend. My homemade blend is a bold version cinnamon base with a high proportion of classic spices (ginger, nutmeg, ginger, and allspice).
EQUIPMENT
Always use aluminum baking pans since they conduct even heat. My favorite is Fat Daddio’s brownie baking pan. There are several options for the size of brownie pan you use. Standard brownie pan is : an 8″× 8″ or 9″x 9″ square pan which will yield a thicker cake-like brownie. Using a 9″ × 13″ or quarter-sheet pan will yield a thinner, fudgy brownie. Be sure to always prep baking pans first with with cooking spray. To easily remove brownies from the pan, line the pan with parchment that hangs over the sides
Ways to eat Granola
There are many ways to eat granola such as as for a snack, for breakfast on top of yogurt, in a batch of granola bars, or in a cookie.
Pumpkin Spice Granola
Ingredients
DRY INGREDIENTS
- 3 c. whole grain oats
- 1 c. quick oats
- 1 c. pecans whole and rough chop
- ½ c. pepitas (pumpkin seeds) whole
- 2 T. brown sugar
- 1 T. Pumpkin Pie Spice
- 1 tsp. salt
WET INGREDIENTS
- ½ c. pumpkin puree
- ⅓ c. oil
- ¼ c. honey
- 2 tsp. vanilla
MIX-INS
- 1 c. dried cranberries
Instructions
PREP
- Gather equipment. Pre-heat oven to 325°. Grease or line a cookie sheet with parchment.
- Rough chop the pecans and set aside.
GRANOLA
- In a large bowl, mix together oats, quick oats, pecans, pepitas, spices, and salt.
- In a separate bowl, mix together pumpkin puree, oil, honey, and vanilla and pour over the dry ingredients.
- Pour granola into a thin layer onto 2 cookie sheets.
BAKE
- Bake granola at 325° for 20 minutes.
ADD MIX-INS
- Turn off oven, stir granola and toss in the dried cranberries and return to oven for 10 minutes.
- Let cool on the pan. Break into pieces and store in an air-tight container.
