This original Natural Foods Cookery Cookbook (1955), by Gertrude Anders Springer is an early natural-food cookbook that promotes moving away from refined and processed ingredients toward whole grains, natural sweeteners, and minimally processed foods. It is a small 71-page book that reflects ideas that were unusual in American cooking in the mid-1950s.
Here are a few selections from the book including an original Pumpernickel Sourdough, pancakes, waffles, wholewheat bread and molasses cookies.
